What we tried:

1st Course:
Esquite del Dzonot — Corn cooked in cochinita pibil broth with pork rib, morita mayo, ranch cream, and fresh cheese.
Cocktail pairing: Coctel Xtabay – tequila, xtabentún liqueur, pineapple, and chaya.

2nd Course:
Pulpo a la Yucateca — Grilled octopus with plantain purée, longaniza from Valladolid, xnipec, habanero mayo, and charred scallions.
Cocktail pairing: Gin Victoriano – gin, cassis, strawberry, and basil.

3rd Course:
Cremita de Coco — A light coconut cream with strawberry and tamarind sauce.
