The dining experience at TOH Restaurante is nothing short of fantastic. Located in what remains of the “tienda de raya” where hacienda workers were once paid, the restaurant’s stunning dining rooms feature walls left in their original state with vegetation growing inside. While breakfast is reserved for guests, the restaurant is open to the public from 2 pm to 11 pm. The menu is a creative blend of international dishes made with local ingredients, offering a delightful culinary experience. Highlights include local Pale Ale, the fish of the day, and a brisket salbute made from corn and plantain.

Historical Significance

The toponym Susulá originates from the Mayan term “Zuzul Ha,” meaning calm water, as noted in the Calepino de Motul dictionary. During the colonial era, the Spaniards phonetically transcribed it as Zuzulha in their documents. It was common for colonial estates to maintain the original Mayan names, often associating them with Catholic saints. Hence, the hacienda was registered as Santo Domingo de Zuzulha.

With the establishment of the Governorship of Yucatán in 1565, it became easier to obtain Crown permits to occupy land and introduce livestock. The ancient Mayan lands called Zuzulha were initially granted in 1570. Today, archaeology identifies the pre-Hispanic site known as Xamán Susulá, which covers a wide area near the old town of Caucel.

During the second half of the 18th century, the first stage of the Yucatecan hacienda emerged, focusing on cattle and corn as the main productive activities. Due to its proximity to Mérida, Susulá was among the first estates to transform into a hacienda, benefiting from a larger rural population and resulting in high production of corn, honey, wax, and other agricultural products.

Hacienda Susulá is now part of the catalog of estates protected by the National Institute of Anthropology and History (INAH), recognized as cultural heritage of the state of Yucatán. Today, it has been transformed into a magnificent complex with a unique personality and defined character.
